Breakfast Bruschetta

INGREDIENTS

2-4 slices Nuzest Protein Power Bread

1 punnet Tomatoes (Quartered)

¼ Red Onion (Finely Diced)

½ cup Basil Leaves

1 clove Garlic

1 tsp Extra Virgin Olive Oil

2-4 Free Range Eggs

Salt

Pepper

METHOD

  1. Wash the Tomatoes and cut into quarters

  2. Place in a small mixing bowl

  3. Finely dice the Red Onion and add to mixing bowl

  4. Roughly tear the Basil Leaves into the bowl too

  5. Add the Extra Virgin Olive Oil and season with Salt and Pepper

  6. Mix and set to the side
  7. Heat a non-stick frying pan on medium heat and cook the Free Range Eggs

  8. While the eggs are cooking, place the Nuzest Protein Power Bread into a toaster and toast.

  9. To plate up, place the Nuzest Protein Power Bread onto a plate and drizzle with a small amount of Extra Virgin Olive Oil

  10. Cut the Garlic in half, then rub it all over the surface of the toasted Nuzest Protein Power Bread

  11. Top each piece of Nuzest Protein Power Bread with the tomato mixture and finish by adding the cooked Free Range Egg

  12. Season with Salt and Pepper, then serve.
